Semolina Kalburabasti with Pistachio
 

Ingredients

  • 200 grams of butter
  • 2,5 water glasses of flour
  • 4 tablespoons of yogurt
  • 2 tablespoons of vegetable oil
  • 1 egg
  • 1 package of soda
  • 1 glass of pistachio
  • 1 teaspoon of cinnamon
  • 1 tablespoon of pistachio powder (for dressing)

For sherbet

  • 3 water glass of granulated sugar
  • 3 water glasses of water
  • Juice of ½ lemon
  • ½ glasses of Nuh'un Ankara Makarnasi Wheat Bran
  • 1 glass of Nuh'un Ankara Makarnasi Semolina

Preparation

  1. We start by adding 3 glasses of granulated sugar and 3 glasses of water into a pot. We mix them until our sugar is rendered.
  2. Our sherbet has boiled for 2-3 minutes. We turn off the stove and add 2-3 drops of lemon juice.
  3. We mix our sherbet
  4. We pour it in a bowl for cooling
  5. We add 1 glass of semolina into a wide bowl.
  6. We add ½ glass of wheat bran.
  7. We add 2.5 glasses of flour and 1 package of baking powder and mix our ingredients properly.
  8. In a different bowl, we add 2 tablespoons of vegetable oil, 4 tablespoons of yoghurt, 1 egg and 200 grams of butter.
  9. We knead these ingredients with our hands.
  10. We add our liquid mixture into our dough. We knead our dough
  11. We have kneaded our dough for 5 minutes. We wrap it in plastic wrap and let it rest for 10 minutes in the fridge.
  12. While our dough is resting, we prepare the stuffing of our kalburabasti.
  13. We add 1 glass of pistachio into a bowl.
  14. We add 1 teaspoon of cinnamon and start mixing.
  15. Our dough has rested for 15 minutes, we take it out of the fridge.
  16. With an ice cream scoop, we portion our dough and put it on a drained and slightly press them. We add 1 dessert spoon of pistachio mixture in the middle and wrap it.
  17. We place kalburabasti on an oven tray. We repeat this process until we are out of dough.
  18. If you don’t have a sieve or a drainer with big holes, you can always shape them with a fork.
  19. We press on the kalburasti which we stuffed, horizontally and vertically with a fork.
  20. We place kalburabasti on an oven tray.
  21. Kalburabasti is ready. We let bake them for 25 minutes at 190 degrees until its top parts are brown.
  22. Our kalburasti with pistachio has baked for 25 minutes, we take them out of the oven. We gather all cooked kalburabasti on a single tray. We pour out cold and prepared sherbet on hot kalburabasti.
  23. We let them rest and cool for 10 minutes to absorb the sherbet.
  24. We serve our Kalburabasti with Pistachio together with pistachio powder. Bon Appetit.
