Pasta with Roasted Pepper Sauce


  • ½ Package of Nuh'un Ankara Makarnasi Curl Pasta
  • 4 red peppers
  • 1 zucchini
  • 1 tablespoon of Olive oil
  • 1 garlic
  • 2 bunches of fresh thyme
  • 1 t.s of Salt
  • Fresh Basil


  1. We start our recipe by baking our 4 red peppers in the oven. We roast our peppers in 180 degrees oven for about 25-30 minutes.
  2. We peel the roasted peppers.
  3. We remove the seeds of all peppers.
  4. We add half a package of pasta to the water and cook it.
  5. We remove the stem of zucchini and chop it to 4 pieces.
  6. We remove the seedy part of the zucchini and diagonally chop it.
  7. We heat our pan and add 1 tablespoon of olive oil.
  8. While our pan is getting hot, we crush the garlic with our knife and slice it into small pieces.
  9. We add the garlic and zucchini to the pan.
  10. We add the leaves of 2 bunches of fresh thyme and saute them.
  11. While the zucchini is being sauted, we add peeled peppers, 2 tablespoons of pasta water, half t.s. of salt and grind them into a paste.
  12. If our sauce is too thick, you can add 1-2 tablespoons of pasta water if you desire.
  13. We continue to saute the zucchini.
  14. Zucchini is done after being sauted for 8 minutes.
  15. We place them in a bowl for serving.
  16. Our pasta is done after being cooked for 10 minutes.
  17. We place the pasta into the pan and add our sauce. We properly mix them.
  18. We serve the Pasta with Roasted Pepper Sauce together with sauted zucchini and basil. Bon appetit.
