Mamzana with Edirne Cheese
 

Ingredients

  • 2 eggplants
  • 2 red peppers
  • 2 green peppers
  • 1 tomatoe
  • 1 lemon
  • 1 bunch of parsley
  • 2 cloves of garlic
  • 3 tablespoons of olive oil
  • ½ tea glass of olive oil (for sauce)
  • 1 pinch of salt (for sauce)
  • 1 pinch of black pepper (for sauce)
  • 1 pinch of salt (garlic)
  • 2 tablespoons of apple vinegar
  • 100 grams of Edirne Cheese
  • 1/2 package of gluten-free penne

Preparation

  1. We start by boiling half a package of Penne pasta.
  2. We turn on the stove. We add 1 teaspoon of salt to our boiling water.
  3. We pierce 2 eggplants with a knife.
  4. We place the eggplants on the stove and roast them.
  5. We roast 2 red peppers and 2 green peppers on different stoves.
  6. We peel the tomato
  7. We chop the tomato into four and remove their seeds
  8. We chop them into cubes.
  9. We place them on a plate.
  10. We thinly slice 1 bunch of parsley.
  11. We place them into a bowl.
  12. We thinly slice 2 cloves of garlic.
  13. We add 1 pinch of salt on top of them and crush them with a knife. We add the garlics into the bowl. We add 2 tablespoons of apple vinegar into the bowl and we mix them. We enrich them with ½  glass of olive oil, 1 pinch of salt and 1 pinch of black pepper.
  14. We mix them. We chop 100 grams of Edirne cheese into cubes. 15. We cover the cheese with thyme and place them on the plate.
  15. Eggplants and peppers are roasted, we place them into a bowl.
  16. We cover it with plastic wrap so that we can peel them easily.
  17. Our pasta is done after 8-9 minutes. We drain them. 19. Place them into a bowl. We peel eggplants and peppers.
  18. We place eggplants and peppers on a plate.
  19. We remove the stems of the red pepper and chop them. We add the chopped pepper to the pasta.
  20. We remove the stems of the eggplants and peppers and chop them. We add cleaned eggplants and peppers into the bowl. We add the tomato into the bowl and mix them.
  21. We add our sauce and properly mix them.
  22. We add half of our Ezine cheese into the bowl. We store the rest to be used for serving.
  23. We mix our ingredients. We slice the lemons which we will use for serving. Mamzana with Edirne Cheese is ready to serve. We Mamzana with Edirne Cheese with lemon. Bon appetit.
