A Memento from Neset Ertas - Sweet Noodles with Curd Cheese and Walnuts

Ingredients & Recipe

  • 1 glass of walnuts
  • 1 tablespoon of granulated sugar
  • 1 tablespoon of butter
  • Nuh'un Ankara Makarnasi Noodles

To make curd cheese at home

  • 1 liter of milk and
  • 2 tablespoons of yoghurt

First we sauted the walnuts with butter. On the other hand, we cooked our noodles. We drained it when its cooked and we mixed it with cheese and butter. While serving it, we sprinkled walnuts and granulated sugar on the plate of the noodles.

A Memento

The excited apprentice of The Memento Kitchen, Burak, likens the Sweet Noodles with Curd Cheese and Walnuts which he cooked with Chef Elif, to Neset Ertas in a poetic manner.


To make curd cheese at home, you need to first put the milk in a pot and then add 2 tablespoons of yoghurt. We dont mix it so that it can react with the yoghurt. After the milk is curdled, we drain it in a clean cloth. After it is drained, we find 200 to 250 grams of homemade curd cheese made from a liter of milk. We use the healthy and delicious cheese whey for soups.
